Wines

At Cat-n-Bird we pride ourselves on hand making every bottle at our boutique winery located in Chelsea, AL.  We import grapes and juice from vineyards all around the world.  We start the process with fermentation and then babysit the wine as it develops until we bottle, cork, and label and then sell from our tasting room.


Each batch produces approximately 550 - 600 bottles and we have the capacity to run up to 12 unique varietals at a time..  Because of our boutique production, we introduce new wines and retire others monthly;  the list below is an overall list of the wines we produce and may not have every one in stock.

Moscato (California)

A luscious blend with flavors and aromas of peach, apricot, baked apple, and pear. This soft white crowd-pleasing California wine also has a hint of tropical fruit. Although the sweetest on the line-up, our wine was fermented longer than most other Moscatos, leaving it less sugary (and with higher alcohol) than you would think.

Viognier (Italy)

Opens with a dramatic and intense floral bouquet enhanced by aromas of apricots and peach. Lush peach and honeysuckle on the palate balances a crisp acidity  

Riesling (Germany)

As Germany’s leading grape variety, this Riesling is aromatic, revealing flowery and citrus notes, which nicely combines with high acidity for the  perfect balance of sweetness.

Gewürztraminer (Germany)

This wine delivers delicious aromas of roses, lychees and tropical fruits, as well as the infamous spicy notes characteristic of Gewurztraminer. Subtle sweetness and added elderflowers enhance the fruity characteristics and spicy tones to complete the experience. Delicately bitter, this medium-bodied wine is elegant, light, and refreshing. 

La Rubia (Argentina)

This Argentine blend highlights the apricot and floral notes of Viognier, the minerality of Riesling, and the tropical aromas of Chardonnay.  

Sauvignon Blanc (New Zealand)

Our New Zealand Sauvignon Blanc is different than many others you may find as it is rich with intense flavors of grapefruit peel, freshly cut grass, a light woodsy finish with hints of French oak.

Pinot Grigio (California)

A dry wine with overtones of green melon leading to a crisp, clean finish. A bouquet of honey and herbs completes the experience of this perennially favorite white.

Chardonnay (California)

This wine produces crisp, clean flavors of green apple and tropical fruit as expected of a classic California Chardonnay. We offer the chard in 3 distinct styles:


Unoaked - Aged in stainless, completely untouched by oak.

Hungarian Oaked - Aged in stainless with Hungarian Oak added

French Oaked - Aged in French Oak barreles

Grenache (Spain)

A fruit forward palate brimming with spicy black pepper notes, dried dark fruit, earth, and a hint of tobacco, with a lengthy and elegant finish

Malbec (Chile)

Warm spice notes and aromas and flavors of ripe blackberry and blackcurrant make up this wine. Chile is well known for these chewy, deep, rustic red wines with intense cherry flavors and blended oak undertones 

Pinot Noir (British Columbia)

Our Pinot Noir features aromas of black cherries and fresh strawberries with silky tannins and subtle notes of pepper and spice round out the palate.  Aged in oak that has been infused with Jack Daniels and Crown Royal Vanilla, this twist on the traditional Pinot will leave you begging for more.

Trinita Crimisi (California)

Trinita Crimisi means the "crimson trinity" in Italian and this has been one of our most popular wines.  This is a California blend, created by the Lyons, of Syrah (70%), Cab (15%), and Zin (15%).  It is smooth and subtle on the pallet with with hints of black cherries, toasted oak, vanilla, and rich notes of dark chocolate and coffee.

Cabernet Sauvignon (Australia)

Soft yet fruity, this Australian Cab shows more complex varietal fruit flavors, including cherry and blackberry, than its Old World counterpart 

Il Grasetto Rosso (Italian Amarone)

  Assertively full-bodied, this classic wine features a delicate nose of black cherries, dark chocolate and well-balanced oak. Ripe, dark fruit flavors are cradled by firm tannins, culminating with a lengthy finish.

Nebbiolo (Italy)

Made from the prized Nebbiolo grape, which means 'from the fog' in Italian.  This wine features flavors of cherries, cocoa, toasted oak, dark fruit and has a dry tannic finish.  It is also known as a Borolo which comes exclusively from the Piedmont region fo Italy.

Montepulciano (Italy)

Montepulciano is a vigorous red grape variety widely planted over much of east-central Italy, capable of creating deeply colored, rich red wines with blackberry fruit flavors and spicy, peppery tannin levels, with hints of tobacco and chocolate.   The Montepulciano regions generally produces wines that are smooth and mellow yet robust and mouth filling, with dependably high alcohol content. 

Zinfandel (Lodi, California)

District 11, West Side Area, Ferrero Ranch. This varietal yields deep color, high alcohol, spicy tones, and jammy and plum fruit aromas.

Shiraz (Australia)

Our Australian Shiraz is a full-bodied red wine, deep and dark in color, with a rich bouquet of fruit and tannins.  It is aged in French oak which leaves a delightful taste on the pallet and has aged gracefully into a velvety wine of pure elegance.

Dolce de Vino

Our Port is a deep ruby red  dessert wine smolders with bold aromas and flavors of black cherries and blackberries. Blended with California Brandy, this is a perfect after dinner delight

Dolce de Vino - Chardonnay "Port"

Napa based Chardonnay sweetened with local honey and 25% California Brandy.  A fantastic twist to one of our most popular wines.

Rosé (France)

Made in the classic French  style, our Rose' is light bodied and pink in color with spiced strawberry and crisp, citrus aromas. The palate features fresh strawberry flavors with a refreshing fruity finish 

Scintillante - Symphony (Prosecco)

Our Scintillante Symphony has refreshing acidity and just a touch of sweetness from the ripe California fruit.   It has a delightful light body and just the right effervescence.

Scintillante - Brut
